Preparation
1. Marinate the Chicken
In a bowl, mix together olive oil, lemon juice, minced garlic, ground cumin, paprika, salt, and black pepper. Add the chicken breast and coat it well with the marinade. Cover and refrigerate for at least 1 hour, or overnight for better flavor.
2. Cook the Rice
Rinse the rice under cold water until the water runs clear. In a pot, bring 2 cups of water to a boil. Add the rinsed rice and a pinch of salt. Lower the heat, cover, and simmer for about 18-20 minutes until the rice is tender and water is absorbed. Fluff with a fork.
3. Grill the Chicken
Preheat the grill to medium-high heat. Thread the marinated chicken onto skewers. Grill for about 6-8 minutes on each side, or until the chicken is cooked through and has nice grill marks.
4. Prepare the Salad
In a bowl, combine diced cucumber and diced tomatoes. You can drizzle with olive oil, lemon juice, salt, and pepper if desired.
5. Serve
On a plate, serve the grilled chicken shish alongside a portion of cooked rice, the salad, and pita bread. Add a side of tzatziki sauce for dipping.
