Directions
- 1
Prepare the crust
Preheat the oven to 325°F (160°C). In a mixing bowl, combine the graham cracker crumbs and melted butter. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer.
- 2
Make the cheesecake filling
In a large mixing bowl, beat the cream cheese with an electric mixer on medium speed until smooth. Gradually add the sugar and mix until well incorporated. Add sour cream and vanilla extract, mixing until smooth. Add eggs one at a time, mixing on low speed until just combined. Be careful not to overmix.
- 3
Combine and bake
Pour half of the cheesecake batter over the crust. Then, spoon the raspberry puree over the batter and swirl gently with a knife. Pour the remaining cheesecake batter on top and smooth the surface. Bake in the preheated oven for 50-60 minutes, or until the center is set but slightly jiggly.
- 4
Cool and chill
Turn off the oven and crack the door open, allowing the cheesecake to cool in the oven for about 1 hour. Afterward, remove from the oven and let it cool to room temperature. Refrigerate for at least 4 hours, preferably overnight.

Serve
Before serving, top the cheesecake with fresh raspberries. Slice and enjoy your homemade cheesecake with raspberry!
