Calzone Preparation

Prepare the Dough
In a large bowl, dissolve sugar and yeast in warm water. Let it sit for about 5-10 minutes until frothy. Stir in olive oil and salt. Gradually add flour, mixing until a dough forms.

Knead the Dough
Transfer the dough to a lightly floured surface and knead for about 5-7 minutes until smooth and elastic. Place in a greased bowl, cover, and let it rise in a warm place for about 1 hour or until doubled in size.

Preheat Oven
Preheat your oven to 475°F (245°C).

Assemble the Calzones
Once the dough has risen, punch it down and divide it into 4 equal pieces. Roll each piece into a circle about 8 inches in diameter. On one half of the circle, add your choice of toppings (up to 3). Fold the other half over and seal the edges by pressing with a fork.

Bake
Place the calzones on a baking sheet lined with parchment paper. Bake in the preheated oven for about 15-20 minutes or until golden brown.

Serve
Remove from the oven, let cool slightly, and serve with marinara sauce for dipping.
