Baklava Preparation

Prepare the Nut Filling
In a mixing bowl, combine the chopped walnuts, chopped pistachios, and ground cinnamon. Set aside.

Prepare the Filo Pastry
Preheat the oven to 350°F (175°C). Melt the unsalted butter in a saucepan. Carefully unroll the filo pastry and cover it with a damp cloth to prevent it from drying out.

Assemble the Baklava
Brush a 9x13 inch baking dish with melted butter. Layer 8 sheets of filo, brushing each sheet with butter before adding the next. Spread a layer of the nut mixture over the top. Repeat the layering process (4 sheets of filo followed by the nut mixture) until the nut filling is used up. Top with 8 more layers of buttered filo.

Cut and Bake
Using a sharp knife, cut the baklava into diamond or square shapes. Bake in the preheated oven for about 45-50 minutes, until golden brown.

Finish the Baklava
Once the baklava is done baking, pour the cooled syrup over the hot baklava. Allow it to soak for several hours or overnight before serving.
