Prepare the Crust
Preheat the oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove and let cool.
Prepare the Cheesecake Filling
In a large mixing bowl, beat together the cream cheese and granulated sugar until smooth. Add in the sour cream, vanilla extract, and eggs, one at a time, mixing until just combined after each addition. Pour the filling over the cooled crust.
Bake the Cheesecake
Bake the cheesecake in the preheated oven for 55-60 minutes, or until the center is set but slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional hour. Remove from the oven and let cool to room temperature, then refrigerate for at least 4 hours, preferably overnight.
Prepare the Chantilly
In a mixing bowl, whip heavy cream, powdered sugar, and vanilla extract until soft peaks form. Be careful not to overwhip.
Serve
Slice the chilled cheesecake and serve with a drizzle of strawberry rhubarb coulis on top and a dollop of chantilly cream.
