Method

Preparing the Filling

  1. 1

    Mixing the Ingredients

In a large bowl, combine black beans, corn, red bell pepper, green onions, jalapeño, shredded cheese, cilantro, ground cumin, chili powder, salt, and black pepper. Mix well until all ingredients are evenly distributed.

  2. 2

    Chill the Mixture

Cover the bowl with plastic wrap and refrigerate the filling for at least 30 minutes to allow the flavors to meld.

Assembling the Egg Rolls

  1. 3

    Prepare the Wrappers

Lay out one egg roll wrapper on a clean surface with one corner facing you. Spoon 2 tablespoons of the filling onto the center of the wrapper.

  2. 4

    Folding the Egg Roll

Fold the corner closest to you over the filling, then fold in the sides, and roll away from you to seal the egg roll. Use a little water to seal the edges if necessary.

  3. 5

    Repeat

Repeat the process with the remaining wrappers and filling.

Frying the Egg Rolls

  1. 6

    Heat the Oil

In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

  2. 7

    Fry the Egg Rolls

Carefully place 3-4 egg rolls in the hot oil at a time, making sure not to overcrowd the pan. Fry for about 3-4 minutes, or until golden brown and crispy.

  3. 8

    Drain and Cool

Remove the egg rolls from the oil and place them on a plate lined with paper towels to drain excess oil.

Making the Dipping Sauce

  1. 9

    Combine Ingredients

In a small bowl, mix together sour cream, salsa, and lime juice until well combined.

  2. 10

    Serve

Serve the egg rolls hot with the dipping sauce on the side.
