Add Cream and Cheese
Once the grits are cooked, stir in the heavy cream, butter, black pepper, and cheddar cheese. Mix well until the cheese is melted and the mixture is creamy. Keep warm.

Cook the Protein
Season your choice of shrimp, catfish, salmon, or lamb chops with Cajun seasoning. Heat olive oil in a skillet over medium-high heat. Cook the shrimp for about 3-4 minutes until opaque; cook catfish for 4-5 minutes per side; grill salmon for about 4-6 minutes per side; and grill lamb chops for about 4 minutes per side until desired doneness.

Sauté the Aromatics
In the same skillet used for the protein, melt 1 tablespoon of butter over medium heat. Add the minced garlic and chopped onion, sautéing until softened and fragrant, about 2-3 minutes.

Prepare the Sauce
Pour in the heavy cream, and season with salt and black pepper. Bring to a simmer and cook for about 5 minutes, until the sauce thickens slightly. Stir in chopped parsley before removing from heat.
