    Prepare the Ingredients

    Gather and measure all ingredients. Rinse the Arborio rice under cold water until the water runs clear to remove excess starch.

    Sauté Aromatics

    In a large skillet or pan, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Then add minced garlic and diced bell pepper, cooking for another 2 minutes.

    Toast the Rice

    Add the rinsed Arborio rice to the pan and stir for 2-3 minutes to toast the rice lightly.

    Pour in the white wine and cook until it's mostly evaporated. Then add the fish stock gradually, one cup at a time, stirring constantly until the rice absorbs the liquid.

    Incorporate the Seafood

    After about 10 minutes of cooking, add the shrimp, mussels, and calamari to the rice. Stir well to combine and continue to cook until the seafood is cooked through, about 5-7 minutes.

    Add the diced tomato, green peas, saffron, paprika, salt, and black pepper. Stir well and cook for an additional 5 minutes until heated through. Adjust seasoning to taste.

    Remove from heat, sprinkle with fresh parsley, and let it sit covered for 5 minutes before serving. Serve warm.
