Filling Preparation

    Cook the Steak

    Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Season the flank steak with salt and black pepper. Sear the steak for about 4-5 minutes on each side or until it reaches your desired doneness. Remove from the skillet and let it rest.

    Sauté Vegetables

    In the same skillet, add another tablespoon of olive oil. Add the diced onions, sliced bell peppers, mushrooms, and jalapeños. Sauté for about 5-7 minutes until the vegetables are softened. Add minced garlic and cook for an additional 1-2 minutes until fragrant.

    Combine Filling

    Once the steak has rested, slice it thinly against the grain. Add the sliced steak to the sautéed vegetables, mix well, and cook for another 2 minutes. Remove from heat and stir in the shredded provolone cheese until melted. Let the mixture cool slightly.

Assembling Egg Rolls

    Fill the Wrappers

    Lay out an egg roll wrapper on a clean surface with one corner facing you. Place about 2 tablespoons of the filling in the center. Fold the corner closest to you over the filling, then fold in the sides and roll it tightly. Seal the top corner with a little water.

    Continue to fill and roll the remaining wrappers until all filling is used.

Frying

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Egg Rolls

    Carefully add 3-4 egg rolls to the hot oil at a time. Fry for about 3-4 minutes, turning occasionally until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

    Serve hot with your favorite dipping sauce.
