    Marinate the Lamb

    In a bowl, combine minced garlic, chopped rosemary, olive oil, lemon juice, salt, and black pepper. Mix well to form a marinade.

    Coat the Lamb

    Place the lamb shoulder in a large resealable bag or shallow dish. Pour the marinade over the lamb, ensuring it is well-coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight.

    Preheat the Oven

    Preheat your oven to 350°F (175°C).

    Prepare the Vegetables

    While the oven is preheating, prepare the vegetables by cutting them into desired sizes: carrots into chunks, potatoes into quarters, and onions into quarters.

    Arrange in Baking Dish

    In a large roasting pan, arrange the prepared vegetables. Place the marinated lamb shoulder on top of the vegetables.

    Roast the Lamb

    Cover the roasting pan with aluminum foil and place it in the preheated oven. Roast for about 2 hours, then remove the foil and continue to roast for an additional 30 minutes, or until the lamb reaches an internal temperature of 145°F (63°C) for medium-rare.

    Once done, remove the lamb from the oven and let it rest for 15 minutes before slicing. Serve with the roasted vegetables.
