    Wash and peel the Russet potatoes. Cut them into fries, approximately 1/4 inch thick.

    Place the cut fries in a bowl of cold water and let them soak for at least 30 minutes. This helps remove excess starch, resulting in crispier fries.

    In a large, heavy-bottomed pot or a deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to monitor the temperature for best results.
