Preparing the Seafood

    Prepare Catfish

    Rinse the catfish fillets under cold water and pat them dry with paper towels. Set aside.

    Prepare Shrimp

    If not already done, peel and devein the shrimp. Rinse them under cold water and pat them dry with paper towels.

Breading Process

    Make Breading Mixture

    In a medium bowl, combine the flour, cornmeal, salt, black pepper, and paprika. Mix well.

    Prepare Egg Wash

    In another bowl, whisk together the eggs and milk until well combined.

    Coat Seafood

    Dip each piece of seafood first in the egg wash, then in the breading mixture, ensuring they are fully coated. Set aside on a plate.

Cooking

    Heat Oil

    In a large skillet or deep fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry Seafood

    Carefully place the coated catfish and shrimp into the hot oil, frying in batches if necessary to avoid overcrowding. Fry for about 3-4 minutes or until golden brown. Remove with a slotted spoon and drain on a paper towel.

    In the same hot oil, add the frozen French fries and cook according to package instructions until golden and crispy. Remove and drain on paper towels.
