Cook the Sausage and Vegetables
In a non-stick skillet over medium heat, add the andouille sausage (sliced) and cook for about 3-4 minutes until browned. Add the diced bell pepper, onion, and jalapeño pepper, and sauté for an additional 3-4 minutes until the vegetables are tender.

In a mixing bowl, whisk together the eggs, milk, salt, and black pepper until well combined.

Once the sausage and vegetables are cooked, pour the egg mixture into the skillet over the sausage and vegetable mixture. Sprinkle Cajun seasoning and shredded cheese on top.
