    Prepare the Housemade Cheese

    In a blender, combine soaked cashews, nutritional yeast, lemon juice, garlic powder, salt, and water. Blend until smooth and creamy. Adjust seasoning if necessary. Set aside.

    Marinate the Mushrooms

    In a bowl, mix sliced mushrooms with a splash of soy sauce and let them marinate for 15 minutes.

    Cook the Vegetables

    In a skillet over medium heat, add a bit of oil. Sauté onions and bell peppers until they are soft, about 5-7 minutes. Add the marinated mushrooms and cook for an additional 5 minutes until tender.

    Cook the Seitan

    In the same skillet, add chopped seitan and cook until heated through and slightly crispy, about 5 minutes.

    Assemble the Cheesesteak

    Slice the hoagie rolls open and layer the seitan mixture on one side. Top generously with the housemade cheese. Optionally, you can place the assembled hoagie under a broiler for 2-3 minutes to melt the cheese further.
