    Prepare the Ingredients

    Rinse and drain the butter beans. Slice the onion and mince the garlic. Chop the sundried tomatoes if they are whole.

    Caramelize the Onion

    In a cast iron skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onion and cook until caramelized, about 10-15 minutes, stirring occasionally. Remove from the skillet and set aside.

    Sauté the Garlic and Spinach

    In the same skillet, add another tablespoon of olive oil. Add the minced garlic and sauté for 1 minute until fragrant. Then, add the fresh spinach and cook until wilted, about 3-4 minutes. Remove from heat.

    Combine the Mixture

    In a large bowl, combine the butter beans, caramelized onions, roasted tomatoes, sundried tomatoes, and sautéed spinach. Mix gently to combine.

    Make the Vegan Feta Sauce

    In a blender, combine the vegan feta cheese with a splash of olive oil, salt, and pepper to taste. Blend until smooth and creamy.

    Combine Everything

    Pour the vegan feta sauce over the butter bean mixture. Stir gently to coat all the ingredients evenly.

    Preheat your oven to 350°F (175°C). Transfer the mixture back to the cast iron skillet, sprinkle with fresh thyme, and bake for 15-20 minutes until heated through. Serve with toasted slices of sourdough bread.
