Prepare the Potatoes
Peel the potatoes and cut them into fry shapes. Soak in cold water for at least 30 minutes to remove excess starch. Drain and pat dry.

Make the Batter
In a large mixing bowl, combine cornstarch, all-purpose flour, salt, and malt vinegar powder. Gradually whisk in the beer (or sparkling water) until smooth.

Heat the Oil
In a deep fryer or large pot, heat the oil to 350°F (175°C).

Fry the Potatoes
Dip the dried potato strips into the batter and allow excess to drip off. Carefully add to the hot oil in batches, frying until golden brown and crispy, about 3-4 minutes per batch.

Drain and Season
Using a slotted spoon, remove the fries from the oil and drain on paper towels. While still hot, sprinkle with fresh herbs and additional malt vinegar powder to taste.

Serve immediately with your favorite dipping sauce.
