    Prep the Seitan

    Preheat your oven to 350°F (175°C). In a mixing bowl, combine the seitan with soy sauce, olive oil, mustard, ground cloves, ground cinnamon, and black pepper. Mix well until the seitan is evenly coated.

    Prepare the Glaze

    In a small saucepan over medium heat, combine the brown sugar with a splash of water, stirring until it dissolves. Allow it to simmer until it thickens slightly. Remove from heat.

    Assemble the Dish

    Spread the seitan mixture in a baking dish. Arrange the pineapple slices over the seitan, then drizzle the brown sugar glaze over the top.

    Bake

    Cover the baking dish with foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 15 minutes, allowing the glaze to caramelize.

    Serve

    Once baked, remove from the oven and let it sit for a few minutes before slicing. Serve warm with your favorite sides.
