Make the Dough
In a large mixing bowl, combine the warm water, sugar, and yeast. Let it sit for about 5-10 minutes until it becomes frothy. Add the olive oil, salt, and flour gradually, mixing until a dough forms.

Knead the Dough
Turn the dough out onto a floured surface and knead for about 8-10 minutes until smooth and elastic. Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Shape the Rolls
After the dough has risen, punch it down and divide it into equal pieces (about 12-15). Shape each piece into a ball and place them on a baking sheet lined with parchment paper. Cover and let them rise for another 30 minutes.

Bake the Rolls
Preheat the oven to 375°F (190°C). Bake the rolls for 15-20 minutes or until golden brown. Remove from the oven and let them cool slightly.

Serve
Serve the warm rolls with the herbed butter on the side for spreading.
