Soak the Potatoes
Soak the sliced potatoes in cold water for at least 30 minutes to remove excess starch, which helps them crisp up better.

Dry the Potatoes
Drain the potatoes and pat them dry with a clean kitchen towel.
Frying

Heat the Oil
In a large, heavy-bottomed pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Sea Salt Chips
Carefully add a handful of potato slices to the hot oil and fry in batches until golden brown, about 3-4 minutes. Remove with a slotted spoon and drain on paper towels. Sprinkle with sea salt while still hot.

Fry the BBQ Chips
Repeat the frying process with another batch of potato slices for the BBQ flavor. After frying, immediately toss the chips in a bowl with brown sugar, paprika, onion powder, garlic powder, cayenne pepper, and sea salt.

Allow the chips to cool for a few minutes before serving. Enjoy the sea salt chips and down east BBQ chips as a snack or appetizer.
