Prepare the Dough
In a large mixing bowl, combine warm water, sugar, and yeast. Let it sit for about 5 minutes until frothy. Add flour and salt, mixing until a dough forms.

Knead the Dough
Turn the dough out onto a floured surface and knead for about 8-10 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise in a warm place for about 1 hour, or until doubled in size.

Shape the Pretzels
Preheat the oven to 450°F (230°C). Punch down the dough and divide it into 8 equal pieces. Roll each piece into a long rope, twist to form a pretzel shape, and place on a baking sheet lined with parchment paper.

Boil the Pretzels
In a large pot, bring water to a boil and add baking soda. Boil each pretzel for about 30 seconds on each side, then remove and place back on the baking sheet.

Serve warm with housemade cheese and spicy German mustard on the side.
