Dough Preparation
Make the Dough
In a large bowl, combine all-purpose flour and salt. Gradually add water, mixing until a dough forms. Knead the dough for about 10 minutes until smooth and elastic. Cover with a damp cloth and let it rest for 30 minutes.

Prepare the Filling
In a mixing bowl, combine chopped squid, green onions, minced garlic, minced ginger, soy sauce, sesame oil, salt, and black pepper. Mix well until all ingredients are combined.
Assembly and Cooking
Assemble the Gyoza
Divide the dough into small pieces and roll each piece into a thin circle. Place a small spoonful of filling in the center of each circle. Fold the dough over to create a half-moon shape and pinch the edges to seal.
Cook the Gyoza
Heat a non-stick skillet over medium heat and add a little oil. Place the gyoza in the skillet and cook for about 2-3 minutes until the bottoms are golden brown. Add a splash of water to the skillet and cover to steam for 5-7 minutes until cooked through.

Serve the gyoza hot with soy sauce and chili oil on the side for dipping.
