Method

Prepare the Brisket

  1. 1

    Season the Brisket

Rub the brisket with salt, black pepper, garlic powder, and onion powder evenly on all sides.

  2. 2

    Cook the Brisket

Cook the brisket in a slow cooker or smoker at 225°F (107°C) for 8-10 hours until tender. If using a smoker, add wood chips for flavor.

  3. 3

    Slice the Brisket

Once cooked, remove the brisket and let it rest for 30 minutes. Slice it thinly against the grain.

Cook the Eggs

  1. 4

    Fry the Eggs

In a nonstick skillet, cook two large eggs over medium heat until the whites are set but the yolks are still runny (about 3-4 minutes).

Prepare the Pimento Cheese

  1. 5

    Mix the Ingredients

In a bowl, combine cream cheese, sharp cheddar cheese, chopped pimentos, hot sauce, garlic powder, salt, and black pepper. Mix until smooth and well-blended.

Assemble the Tuck Special

  1. 6

    Layer the Ingredients

On a plate, layer sliced brisket, top with the over-easy egg, drizzle with red and white BBQ sauces, and add sliced pickles and a dollop of spicy pimento cheese.
