Method
Prepare the Brisket

Season the Brisket
Rub the brisket with salt, black pepper, garlic powder, and onion powder evenly on all sides.

Cook the Brisket
Cook the brisket in a slow cooker or smoker at 225°F (107°C) for 8-10 hours until tender. If using a smoker, add wood chips for flavor.

Slice the Brisket
Once cooked, remove the brisket and let it rest for 30 minutes. Slice it thinly against the grain.
Cook the Eggs

Fry the Eggs
In a nonstick skillet, cook two large eggs over medium heat until the whites are set but the yolks are still runny (about 3-4 minutes).
Prepare the Pimento Cheese

Mix the Ingredients
In a bowl, combine cream cheese, sharp cheddar cheese, chopped pimentos, hot sauce, garlic powder, salt, and black pepper. Mix until smooth and well-blended.
