Beans and Vegetables

Method

Prepare the ingredients

    Rinse and drain beans

    In a colander, rinse the black beans and field peas under cold water. Drain well and set aside.

    Prepare the vegetables

    Dice the red and green bell peppers and red onion into small pieces. Set aside in a large mixing bowl.

    Add corn

    If using canned white corn, drain and rinse it, then add it to the bowl with the peppers and onion. If using frozen, thaw it first and then add.

Make the dressing

    Combine dressing ingredients

    In a small bowl, whisk together the olive oil, apple cider vinegar, lime juice, minced garlic, cumin, salt, and black pepper until well combined.

Combine and serve

    Mix everything together

    In the large bowl with the vegetables, add the rinsed black beans and field peas. Pour the dressing over the salad ingredients.

    Toss the salad

    Gently toss the salad until all ingredients are well coated with the dressing.

    Add cilantro

    If desired, sprinkle chopped cilantro on top of the salad and give it another gentle toss.

    Chill and serve

    Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld. Serve cold and enjoy!
