Prepare Grits

    Cook Grits

    In a medium saucepan, bring 4 cups of water to a boil. Add 1 cup of grits and 1 tsp of salt. Stir well, reduce heat to low, and cover. Cook for approximately 20-25 minutes, stirring occasionally, until the grits are thick and creamy.

    Add Cheese

    Once the grits are cooked, remove from heat and stir in 2 cups of shredded Gouda cheese until melted and well blended.

Prepare Sausage Mixture

    Cook Sausage and Vegetables

    In a large skillet over medium heat, add 1 lb of crumbled sausage. Cook until browned, about 5-7 minutes. Add 1 chopped onion, 1 diced red bell pepper, and 1 diced green bell pepper. Cook for an additional 5-7 minutes, or until the vegetables are softened.

    Add Sauce

    Stir in 2 tablespoons of Tabasco sauce and mix well. Set the mixture aside to cool slightly.

Combine and Bake

    Prepare Egg Mixture

    In a separate bowl, whisk together 4 large eggs and 1 cup of milk until well combined.

    Combine All Ingredients

    In a large mixing bowl, combine the cooked grits, sausage mixture, and egg mixture. Stir until everything is well mixed.

    Bake Casserole

    Preheat your oven to 350°F (175°C). Pour the mixture into a greased 9x13 inch baking dish. Bake for 30-35 minutes, or until the casserole is set and golden brown on top.
