Preparation
Prepare the Brisket
If using leftover smoked brisket, shred it into bite-sized pieces. If cooking brisket from scratch, smoke it until tender, then shred.
Mix Brisket and Sauce
In a medium bowl, combine the shredded brisket with the barbecue sauce. Stir until well coated.
Assembly
Layer the Nachos
On a large baking sheet or oven-safe platter, spread an even layer of tortilla chips.
Add Brisket
Evenly distribute the barbecue brisket mixture over the tortilla chips.
Top with Cheese
Sprinkle the shredded cheddar and Monterey Jack cheese evenly over the brisket.
Add Jalapeños
Scatter the sliced jalapeños over the cheese layer.
Baking
Bake the Nachos
Preheat the oven to 350°F (175°C). Place the assembled nachos in the oven and bake for 10-15 minutes, or until the cheese is melted and bubbly.
Garnish
Once removed from the oven, garnish with chopped green onions.
Serving
Serve Immediately
Serve the nachos hot with extra barbecue sauce on the side for dipping.
