Queso Directions
Melt the Cheeses
In a medium saucepan over low heat, combine Velveeta cheese, Monterey Jack cheese, and cream cheese. Stir frequently until melted and smooth.
Add the Flavorings
Once the cheese mixture is melted, add the diced tomatoes with green chilies, chopped green onions, diced jalapeños, garlic powder, cumin, salt, black pepper, and cayenne pepper. Stir well to combine the ingredients.
Heat Through
Continue to cook over low heat for about 5-10 minutes, stirring occasionally, until the queso is heated through and bubbly. Adjust seasoning with additional cayenne pepper if more heat is desired.
Tortilla Chips Directions
Prepare the Corn Tortillas
Cut the corn tortillas into triangle shapes using a knife or kitchen scissors.
Heat the Oil
In a large skillet, pour in vegetable oil and heat over medium-high heat until hot but not smoking.
Fry the Tortilla Chips
Carefully add the tortilla triangles to the hot oil in batches, frying for about 2-3 minutes or until golden brown and crispy. Use a slotted spoon to remove them from the oil and place them on paper towels to drain excess oil.
Serve
Once all tortilla chips are fried, serve them warm alongside the house-made queso.
