Chips

Method

Chips

  1. 1

    Prepare the Chips

Cut the corn tortillas into triangles, approximately 6 pieces per tortilla.

  2. 2

    Heat the Oil

In a large skillet, heat the vegetable oil over medium-high heat until it reaches about 350°F (175°C). You can test by dropping a small piece of tortilla into the oil; if it sizzles, it’s ready.

  3. 3

    Fry the Tortillas

Carefully add the tortilla triangles in batches to the hot oil. Fry until they are golden brown and crispy, about 2-3 minutes per side.

  4. 4

    Drain the Chips

Using a slotted spoon, transfer the chips to a paper towel-lined plate to drain excess oil. Season with salt while they are still hot.

Queso

  1. 5

    Melt the Cream Cheese

In a medium saucepan over low heat, add the softened cream cheese. Stir until melted and smooth.

  2. 6

    Add the Cheeses

Gradually mix in the shredded cheddar and Monterey Jack cheeses, stirring continuously until fully melted and combined.

  3. 7

    Incorporate Milk

Pour in the milk, and continue stirring until the mixture is creamy. If the queso is too thick, add more milk until the desired consistency is reached.

  4. 8

    Mix in Tomatoes and Jalapeños

Stir in the diced tomatoes with green chilies and the jalapeños. Allow to simmer for a few minutes, stirring occasionally.

  5. 9

    Season the Queso

Add garlic powder, onion powder, salt, and black pepper to taste. Mix well and let it simmer for another 2-3 minutes until heated through.
