Pork Rinds Preparation

    Prepare the Pork Skin

    Start by cutting the pork skin into 1-2 inch strips. Make sure to remove any excess fat from the skin.

    Boil the Pork Skin

    In a large pot, combine the cut pork skin and water. Add the salt and bring it to a boil over medium-high heat. Once boiling, reduce heat to low and simmer for about 2 hours, until the skin is tender.

    Dry the Pork Skin

    After simmering, remove the pork skin from the pot and place it on a wire rack. Let it cool completely for about 30 minutes. This step helps to dry out the skin.

    Fry the Pork Skin

    Heat vegetable oil in a deep fryer or heavy pot to 350°F (175°C). Once heated, add the dried pork skin in batches, frying until they puff up and become golden brown (about 2-3 minutes). Remove and drain on paper towels.

    Prepare the Ingredients

    Rinse the fresh chili peppers and garlic. Remove the stems from the chili peppers and roughly chop them.

    Blend the Sauce

    In a blender, combine the chopped chili peppers, garlic, white vinegar, salt, and sugar. Blend until smooth.

    Bottle the Sauce

    Pour the hot sauce into a clean bottle or jar. Let it sit for at least 30 minutes to allow the flavors to meld.
