Method

Crust Preparation

  1. 1

    Make the Crust

In a large bowl, mix the flour, sugar, and salt. Cut in the cubed chilled butter until the mixture resembles coarse crumbs.

  2. 2

    Combine with Ice Water

Gradually add the ice water, one tablespoon at a time, mixing until the dough comes together. Do not overwork the dough.

  3. 3

    Chill the Dough

Form the dough into a disc, wrap in plastic wrap, and refrigerate for at least 1 hour.

  4. 4

    Roll Out the Dough

On a floured surface, roll the dough out to fit a 9-inch pie pan. Transfer the dough to the pan and trim any excess. Prick the bottom with a fork.

Filling Preparation

  1. 5

    Prepare the Filling

In a mixing bowl, whisk together the eggs, corn syrup, brown sugar, and vanilla extract until smooth.

  2. 6

    Add Pecans

Fold in the chopped pecans into the mixture. For the fudge option, add the chocolate chips instead of pecans.

  3. 7

    Optional Chess Filling

For a chess filling, you may incorporate additional ingredients like cream cheese or other flavorings as desired.

Baking

  1. 8

    Preheat Oven

Preheat your oven to 350°F (175°C).

  2. 9

    Fill the Crust

Pour the filling mixture into the prepared crust.

  3. 10

    Bake the Pie

Bake the pie for 45-50 minutes, or until the filling is set and the top is lightly browned.

  4. 11

    Cool and Serve

Let the pie cool on a wire rack for at least 2 hours before slicing. Serve warm or at room temperature.
