Method

Crust Preparation

  1. 1

    Make the Crust

In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Cut in the unsalted butter until the mixture resembles coarse crumbs.

  2. 2

    Add Ice Water

Stir in the ice water, one tablespoon at a time, until the dough just comes together. Avoid overworking the dough.

  3. 3

    Chill the Dough

Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

  4. 4

    Roll Out the Dough

On a floured surface, roll out the chilled dough into a circle about 12 inches in diameter. Transfer to a 9-inch pie plate and trim the excess dough.

  5. 5

    Pre-Bake the Crust

Preheat your oven to 375°F (190°C). Prick the bottom of the crust with a fork and bake for 10-12 minutes or until lightly golden. Remove and let cool slightly.

Filling Preparation

  1. 6

    Prepare the Filling

In a large bowl, whisk together the granulated sugar, brown sugar, corn syrup, melted butter, eggs, vanilla extract, and salt until smooth.

  2. 7

    Add the Pecans

Fold in the chopped pecans until evenly distributed.

  3. 8

    Fill the Crust

Pour the filling mixture into the pre-baked pie crust, spreading it evenly.

  4. 9

    Bake the Pie

Reduce the oven temperature to 350°F (175°C) and bake the pie for 50-60 minutes or until the filling is set and the top is golden.

  5. 10

    Cool and Serve

Allow the pie to cool at room temperature for at least 2 hours before slicing. Serve plain or with whipped cream.
