Method

Protein Preparation

  1. 1

    Marinate the Chicken

In a large bowl, combine the olive oil, garlic powder, paprika, salt, and black pepper. Add the chicken thighs and coat them well with the marinade. Cover and let marinate in the refrigerator for at least 30 minutes.

  2. 2

    Cook the Chicken

Preheat a grill or skillet over medium-high heat. Once hot, add the marinated chicken thighs. Cook for about 6-7 minutes on each side or until they reach an internal temperature of 165°F (75°C). Remove from heat and let rest for 5 minutes before slicing.

Vegetable Sides Preparation

  1. 3

    Prepare the Green Beans

Trim the ends of the green beans. In a pot of boiling salted water, blanch the green beans for about 3-4 minutes until tender-crisp. Drain and set aside.

  2. 4

    Cook the Carrots

Peel and slice the carrots into rounds. In the same pot, add the carrots to the boiling water and cook for 5-6 minutes until tender. Drain and set aside.

  3. 5

    Sauté the Corn

In a skillet over medium heat, melt the butter. Add the corn and season with salt and pepper. Sauté for about 5 minutes until heated through.

Starch Side Preparation

  1. 6

    Cook the Rice

In a saucepan, combine the rice, water (or chicken broth), and salt. Bring to a boil. Reduce heat to low, cover, and simmer for 18-20 minutes or until the rice is tender and all liquid is absorbed. Fluff with a fork before serving.
