Method

Prepare the Chicken

  1. 1

    Cook the Chicken

In a large skillet, heat olive oil over medium heat. Add the chicken breasts and sear for 5 minutes on each side until golden brown.

  2. 2

    Add Spices and Broth

Sprinkle the ancho chili powder, garlic powder, onion powder, cumin, salt, and black pepper over the chicken. Pour in the chicken broth, cover, and simmer on low heat for 20-25 minutes until the chicken is cooked through.

  3. 3

    Shred the Chicken

Remove the chicken from the skillet, let it cool for a few minutes, and then shred it using two forks. Return the shredded chicken to the skillet and mix with the remaining cooking liquid.

Make the Pimento Cheese

  1. 4

    Combine Ingredients

In a mixing bowl, combine the cream cheese, shredded cheddar cheese, chopped pimentos, hot sauce, garlic powder, and salt. Mix until well combined and creamy.

Assemble the Taquitos

  1. 5

    Fill the Tortillas

Take a corn tortilla and place a generous spoonful of shredded chicken and a spoonful of pimento cheese in the center. Roll it tightly and secure with a toothpick if necessary.

  2. 6

    Repeat

Repeat the filling and rolling process for all 10 tortillas.

Fry the Taquitos

  1. 7

    Heat the Oil

In a deep frying pan, heat vegetable oil over medium-high heat until hot (about 350°F or 175°C).

  2. 8

    Fry the Taquitos

Carefully add the taquitos to the hot oil, a few at a time, and fry until golden brown (about 3-4 minutes per side).

  3. 9

    Drain and Cool

Remove the taquitos from the oil and place them on a plate lined with paper towels to drain excess oil.

Make the Creamy Jalapeno Dip

  1. 10

    Mix Ingredients

In a bowl, combine sour cream, mayonnaise, chopped jalapenos, lime juice, garlic powder, and salt. Stir well until smooth.
