Preparing the Chicken

Marinate the Chicken
In a large bowl, combine buttermilk, cayenne pepper, paprika, salt, and black pepper. Add the chicken thighs, ensuring they are fully submerged. Cover and refrigerate for at least 1 hour or overnight for best results.

Prepare the Breading
In a shallow dish, mix together the all-purpose flour and cornstarch. Set aside.

Fry the Chicken
Heat vegetable oil in a large skillet over medium-high heat. Remove chicken from the marinade and let excess buttermilk drip off. Dredge each piece in the flour mixture, ensuring an even coating. Carefully place the chicken in the hot oil and fry for about 6-8 minutes on each side or until golden brown and cooked through. Transfer to a paper towel-lined plate to drain excess oil.
Making the Jalapeño Ranch

In a blender or food processor, combine ranch dressing, jalapeños (seeds removed), lime juice, garlic powder, and salt. Blend until smooth. Adjust seasoning to taste.

In a large bowl, combine shredded cabbage, grated carrots, mayonnaise, apple cider vinegar, sugar, salt, and black pepper. Toss until well combined. Cover and let sit in the refrigerator for at least 30 minutes to allow the flavors to meld.
Assembling the Sandwich

Build the Sandwich
To assemble, take a burger bun, place a fried chicken thigh on the bottom half, top it with a generous portion of cole slaw, add pickles, and drizzle jalapeño ranch on top. Finally, place the top half of the bun over the sandwich.
