    Prepare the Ingredients

    Gather all ingredients. Slice the red onion thinly and set aside.

    Butter the Bread

    Spread 1 tablespoon of butter on one side of each slice of sourdough bread.

    Assemble the Sandwich

    On the unbuttered side of two slices, layer 2 slices of cheddar cheese, 2 slices of mozzarella cheese, a few slices of red onion, 2 tablespoons of BBQ sauce, and 2 slices of pickles. Top with the other two slices of bread, buttered side up.

    Grill the Sandwich

    Preheat a skillet or griddle over medium heat. Place the sandwich in the skillet and grill for about 3-4 minutes, or until the bread is golden brown and the cheese starts to melt. Flip the sandwich carefully and grill the other side for another 3-4 minutes.

    Serve

    Once both sides are golden brown and the cheese is melted, remove the sandwich from the skillet. Let it cool for a minute, then slice in half and serve warm.
