Prepare the Meat
If using pulled pork, chicken, or ground beef, ensure they are cooked thoroughly and shredded or chopped into bite-sized pieces. Keep them warm until ready to assemble the nachos.

Prepare the Cheese
In a bowl, mix the shredded cheddar and Monterey Jack cheese together. Set aside.

Prepare Garnishes
Slice the jalapeños, chop the cilantro, and have the sour cream and guacamole ready for serving.
Assembly

Layer the Nachos
On a large baking sheet or oven-safe dish, spread the tortilla chips evenly to cover the base.

Add Cheese and Meat
Sprinkle half of the mixed cheese over the tortilla chips. Then, evenly distribute your choice of meat (pulled pork, shredded chicken, or ground beef) over the chips. Top with the remaining cheese.

Melt the Cheese
Preheat your oven to 350°F (175°C). Place the loaded nachos in the oven and bake for about 10-15 minutes, or until the cheese is melted and bubbly.

Once the nachos are out of the oven, add sliced jalapeños, dollops of sour cream, guacamole, and sprinkle chopped cilantro on top.
