Preparation

    Preheat the Oven

    Preheat your oven to 400°F (200°C).

    Prepare the Baking Pan

    Grease an 8x8 inch (20x20 cm) baking pan with butter or cooking spray.

Mixing the Batter

    Combine Dry Ingredients

    In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt until well blended.

    Mix Wet Ingredients

    In another bowl, beat together the milk, eggs, and vegetable oil until smooth.

    Combine Mixtures

    Pour the wet mixture into the dry ingredients and stir until just combined. Do not overmix.

    Add Vegetables

    Fold in the diced jalapeños and red bell pepper until evenly distributed.

Baking

    Bake the Cornbread

    Pour the batter into the prepared baking pan and smooth the top. Bake in the preheated oven for 20-25 minutes or until a toothpick inserted into the center comes out clean.

    Butter Searing

    Once baked, remove the cornbread from the oven and let it cool for a few minutes. Melt the remaining butter in a skillet over medium heat, and sear the cornbread slices for 1-2 minutes on each side until golden brown.
