Preparation of Vegetables

    Chop the Cabbage

    Remove the outer leaves of the cabbage, then slice it into quarters. Remove the core and slice the quarters into thin strips. Measure out 4 cups of shredded cabbage.

    Slice the Onion

    Peel the red onion and slice it thinly. Use about 1 medium-sized onion for this recipe.

    Chop the Bell Pepper

    Remove the stem and seeds from the green bell pepper. Chop it into small pieces or strips, measuring about 1 medium-sized pepper.

Mixing the Marinade

    Combine Ingredients

    In a large bowl, combine 1 cup of granulated sugar, 1 cup of apple cider vinegar, and 1 tablespoon of olive oil.

    Season the Marinade

    Add 1 teaspoon of salt and 1 teaspoon of black pepper to the bowl with the liquid ingredients and whisk until the sugar is dissolved and the mixture is well combined.

Combine and Chill

    Toss the Vegetables

    Add the shredded cabbage, sliced red onion, and chopped green bell pepper to the bowl with the marinade. Toss everything together until the vegetables are evenly coated.

    Refrigerate

    Cover the bowl with plastic wrap or a lid and refrigerate for at least 1 hour (or up to 24 hours) to allow the flavors to meld.
