Prepare the Oil
In a large pot, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Chips
Carefully add tortilla chips to the hot oil in batches. Fry until golden brown and crispy, about 2-3 minutes per batch.

Drain and Season
Remove chips using a slotted spoon and drain on paper towels. Sprinkle with salt while still warm.
Texas Caviar

Mix the Ingredients
In a large bowl, combine black beans, pinto beans, corn, red onion, bell pepper, jalapeño, and cilantro.

Prepare the Dressing
In a small bowl, whisk together lime juice, olive oil, salt, and black pepper.

Combine
Pour the dressing over the bean mixture and toss until evenly coated. Let it sit for at least 30 minutes to allow flavors to meld.
Nacho Cheese Dip

Combine Ingredients
In a medium saucepan over low heat, combine cheddar cheese, cream cheese, and milk. Stir continuously until melted and smooth.

Add Flavorings
Stir in diced jalapeño, garlic powder, onion powder, and salt. Continue to heat until everything is well combined.

Serve Warm
Remove from heat and serve the nacho cheese dip warm alongside the homemade chips and Texas caviar.
