Crust Preparation
- 1
Make the Dough
In a mixing bowl, combine flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs.
- 2
Add Ice Water
Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Do not overmix.
- 3
Chill the Dough
Shape the dough into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.
- 4
Roll Out the Dough
Once chilled, roll out the dough on a floured surface to fit a 9-inch pie plate.
- 5
Transfer to Pie Plate
Place the rolled dough into the pie plate, trim excess dough, and crimp the edges. Preheat the oven to 350°F (175°C).
- 6
Blind Bake
Line the crust with parchment paper, fill with pie weights or beans, and bake for 15 minutes. Remove weights and bake for another 5 minutes until lightly golden.

Melt Butter
In a small saucepan, melt the butter over low heat and set aside to cool slightly.
- 8
Mix Sugar and Cornmeal
In a large mixing bowl, combine granulated sugar and cornmeal.
- 9
- 10
Add Vanilla
Stir in the vanilla extract until well combined.
- 11
Pour Filling into Crust

- 12
Bake the Pie
Bake in the preheated oven for 45-50 minutes, or until the filling is set and the top is golden.
- 13
