Preparation of Beans

    Soak the Beans

    In a large bowl, soak the pinto beans in water overnight or for at least 8 hours to soften them.

    Cook the Beans

    Drain the soaked beans and place them in a large pot. Add 6 cups of fresh water and bring to a boil. Reduce heat and simmer for about 1 to 1.5 hours or until the beans are tender.

Cooking the Charro Beans

    Prepare the Bacon

    In a skillet over medium heat, cook the bacon until crispy. Remove the bacon, crumble it, and set aside. Reserve 2 tablespoons of bacon fat in the skillet.

    Sauté the Vegetables

    In the same skillet with the reserved bacon fat, add chopped onion, minced garlic, diced tomato, green bell pepper, and jalapeño. Sauté for about 5-7 minutes or until the vegetables are softened.

    Add the sautéed vegetables and crumbled bacon to the cooked beans. Stir in cumin, salt, and black pepper to taste. Let the mixture simmer for an additional 15-20 minutes, allowing the flavors to meld.

    Before serving, stir in the chopped cilantro and juice of the lime. Adjust seasoning if necessary.
