Preparation of Ingredients

    Make the Cole Slaw

    In a large bowl, combine the shredded cabbage and carrots. In a separate small bowl, mix together mayonnaise, apple cider vinegar, sugar, salt, and black pepper. Pour the dressing over the cabbage and carrots and toss until well combined. Refrigerate for at least 30 minutes.

    Prepare the Pico de Gallo

    In a bowl, mix the diced tomatoes, red onion, chopped cilantro, lime juice, and salt. Stir until all ingredients are combined. Set aside.

    Make the Tartar Sauce

    In a small bowl, mix together mayonnaise, dill pickle relish, lemon juice, and salt. Stir until smooth and set aside.

Cooking the Catfish

    Cook the Catfish

    Heat a skillet over medium-high heat. Add a small amount of oil. Season the catfish fillets with salt and pepper. Place the fillets in the skillet and cook for about 3-4 minutes per side, or until golden brown and cooked through. Remove from heat and let rest for a few minutes.

Assembling the Tacos

    Warm the Tortillas

    In a separate skillet or on a grill, warm the corn tortillas for about 30 seconds on each side until they are pliable.

    Assemble the Tacos

    On each tortilla, layer the cooked catfish, a generous portion of cole slaw, a handful of pico de gallo, a sprinkle of shredded cheddar cheese, and a drizzle of tartar sauce. Serve immediately.
