Prepare the Catfish
In a large bowl, mix together the cornmeal, flour, Cajun seasoning, salt, and black pepper.

Coat the Catfish
Dredge each catfish fillet in the cornmeal mixture, ensuring they are well coated.

Fry the Catfish
In a large skillet, heat the vegetable oil over medium-high heat. Once hot, add the catfish fillets and fry until golden brown, about 4-5 minutes per side. Remove and drain on paper towels.
For the Tartar Sauce

Mix the Tartar Sauce
In a bowl, combine the mayonnaise, chopped dill pickles, capers, lemon juice, Dijon mustard, and salt. Adjust seasoning to taste.
For the Slaw

Prepare the Slaw
In a large bowl, combine the shredded cabbage, shredded carrot, mayonnaise, apple cider vinegar, sugar, and salt. Mix until well combined. Adjust seasoning to taste.
For Assembly

Assemble the Sandwich
On each hamburger bun, spread a generous amount of tartar sauce, add a piece of fried catfish, top with a scoop of slaw, and add pickles as desired. Serve immediately.
