Preparing the Catfish

Season the Catfish
In a bowl, season the catfish fillets with salt, black pepper, and cayenne pepper. Ensure that the fillets are evenly coated. Set aside for 15 minutes to allow flavors to meld.

Prepare the Breading Station
In one shallow dish, place the all-purpose flour. In a second shallow dish, combine the cornmeal with a pinch of salt and pepper. In a third shallow dish, whisk together the eggs and milk until well combined.

Frying the Catfish

Heat the Oil
In a large deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Fillets
Carefully place the breaded catfish fillets into the hot oil, ensuring not to overcrowd the pan. Fry for 4-5 minutes on one side, or until golden brown. Flip and fry for an additional 4-5 minutes until the other side is also golden brown. Use a slotted spoon to remove the fillets and drain on paper towels.

In a medium bowl, mix together the mayonnaise, finely chopped dill pickles, capers, lemon juice, salt, and black pepper until well combined. Adjust seasoning to taste.
