Method

Dough Preparation

  1. 1

    Make the Dough

In a large mixing bowl, combine all-purpose flour, sugar, and salt. Cut in the cold unsalted butter until the mixture resembles coarse crumbs. Gradually add cold water, mixing until the dough comes together. Wrap in plastic wrap and refrigerate for at least 30 minutes.

Filling Preparation

  1. 2

    Prepare the Filling

Peel, core, and chop the Granny Smith apples into small cubes. In a pan, combine the chopped apples, brown sugar, cinnamon, and lemon juice. Cook over medium heat for about 5-7 minutes until the apples are tender. Remove from heat and let cool. Once cooled, stir in the caramel sauce.

Empanada Assembly

  1. 3

    Assemble the Empanadas

Preheat your oven to 375°F (190°C). On a floured surface, roll out the chilled dough to about 1/8 inch thick. Cut into circles (about 4-5 inches in diameter). Place a spoonful of the apple filling in the center of each circle. Fold the dough over to create a half-moon shape and press the edges with a fork to seal.

Baking

  1. 4

    Bake the Empanadas

Place the empanadas on a baking sheet lined with parchment paper. Brush the tops with beaten egg. In a small bowl, combine the sugar and cinnamon for the topping. Sprinkle the mixture over the empanadas. Bake in the preheated oven for 20-25 minutes or until golden brown.

Serving

  1. 5

    Serve

Once baked, let the empanadas cool slightly before serving. Drizzle additional caramel sauce over the top if desired.
