Burnt Ends

    Prepare the Beef

    Rub the beef brisket with salt, black pepper, garlic powder, and onion powder. Ensure it is evenly coated on all sides.

    Cook the Brisket

    Preheat your smoker or grill to 225°F (107°C). Place the brisket in the smoker and cook for about 6-8 hours or until the internal temperature reaches 190°F (88°C).

    Cube the Brisket

    Once cooked, remove the brisket from the smoker and let it rest for 30 minutes. Cut the brisket into bite-sized cubes.

    Sauté in Viola Sauce

    In a large skillet, add the cubed brisket and pour in the Viola sauce. Sauté over medium heat for about 5-10 minutes until heated through and slightly caramelized.

Grits Casserole

    Cook the Grits

    In a medium saucepan, bring 4 cups of water to a boil. Stir in 1 cup of grits and 1 tsp of salt. Reduce heat to low and cook, stirring occasionally, for about 20-25 minutes, until thickened.

    Combine Ingredients

    Once the grits are cooked, remove from heat and stir in milk, cheddar cheese, butter, and beaten eggs until well combined.

    Bake the Casserole

    Preheat the oven to 350°F (175°C). Pour the grits mixture into a greased baking dish and bake for 30 minutes, or until set and golden on top.

Cornbread

    Mix Dry Ingredients

    In a large bowl, combine cornmeal, flour, sugar, baking powder, and salt.

    Combine Wet Ingredients

    In another bowl, whisk together milk, egg, and melted butter.

    Combine Mixtures

    Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.

    Bake the Cornbread

    Preheat the oven to 400°F (200°C). Pour the batter into a greased baking pan and bake for 20-25 minutes, or until golden and a toothpick comes out clean.

Side Dish

    Sauté the Green Beans

    In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute.

    Add Green Beans

    Add green beans and sprinkle with salt. Sauté for another 5-7 minutes until the beans are tender but still crisp.
