Brisket Preparation

    Season the Brisket

    In a small bowl, mix together salt, black pepper, garlic powder, onion powder, and smoked paprika. Rub this mixture all over the brisket, ensuring it is evenly coated.

    Cook the Brisket

    Preheat your smoker or oven to 225°F (107°C). Place the seasoned brisket on the smoker rack or in a roasting pan if using an oven. Smoke or roast for about 6-8 hours, or until the internal temperature reaches 195°F (90°C).

    Rest the Brisket

    Once cooked, remove the brisket from the heat and let it rest for at least 30 minutes before slicing. This allows the juices to redistribute.

BBQ Sauce Preparation

    Combine Ingredients

    In a medium saucepan, combine ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, smoked paprika, garlic powder, salt, and black pepper. Stir well to combine.

    Simmer the Sauce

    Bring the mixture to a simmer over medium heat. Reduce heat to low and let it cook for 20 minutes, stirring occasionally until thickened.

    Slice the Brisket

    Using a sharp knife, slice the rested brisket against the grain into thin slices.

    Assemble the Sandwich

    Spread a generous amount of BBQ sauce on the bottom half of each sandwich roll. Layer with sliced brisket, then top with pickles. Place the top half of the roll on the sandwich.

    Serve the brisket sandwiches warm with extra BBQ sauce on the side if desired.
