Brisket Preparation

Method

Brisket Preparation

  1. 1

    Season the Brisket

In a small bowl, mix together salt, black pepper, garlic powder, onion powder, smoked paprika, and brown sugar. Rub the seasoning mix all over the brisket point, ensuring it is evenly coated.

  2. 2

    Wrap the Brisket

Wrap the seasoned brisket tightly in plastic wrap and refrigerate for at least 2 hours, preferably overnight to enhance flavor.

Cooking the Brisket

  1. 3

    Preheat the Smoker

Preheat your smoker to 225°F (107°C). Use wood chips of your choice (hickory or oak works well) for a great smoky flavor.

  2. 4

    Smoke the Brisket

Remove the brisket from the refrigerator and place it in the smoker. Smoke for about 6-8 hours, or until the internal temperature reaches 195°F (90°C).

  3. 5

    Rest the Brisket

Once cooked, remove the brisket from the smoker and let it rest for at least 30 minutes before cutting. This helps retain the juices.

Making the Burnt Ends

  1. 6

    Cut the Brisket

After resting, cut the brisket into large cubes (about 1-inch pieces).

  2. 7

    Mix with Sauce

In a large bowl, combine the barbecue sauce, honey, and Worcestershire sauce. Add the brisket cubes and toss until well coated.

  3. 8

    Return to the Smoker

Place the sauced brisket cubes back into the smoker for an additional 1-2 hours, until they are caramelized and tender.

Serving

  1. 9

    Serve

Remove the burnt ends from the smoker and let them cool slightly. Serve warm with extra barbecue sauce on the side.
