Prepare the Meat
If you are using leftover smoked pork, chicken, or brisket, shred or chop the meat into bite-sized pieces. If you are preparing fresh meat, smoke it until fully cooked and tender, then shred or chop.

Prepare Kettle Chips or Fries
If you are using kettle potato chips, simply open the bag and spread them evenly on a large serving platter. If using fries, cook them according to package instructions or fry them until golden brown and crispy, then place them on the platter.
Assemble Nachos/Fries

Layer the Ingredients
Start by distributing the prepared smoked meat evenly over the kettle chips or fries. Next, drizzle the nacho cheese generously over the meat.

Add BBQ Sauce
Drizzle the BBQ sauce over the nacho cheese and meat layer.

Top with Sour Cream
Add dollops of sour cream on top of the nachos/fries.

Finish with Pico de Gallo and Green Onions
Spoon pico de gallo over the top and garnish with chopped green onions.
