Preparation

    Prep the Pork Belly

    Cut the pork belly into 1-inch cubes and place them in a large bowl.

    Make the Rub

    In a separate bowl, combine brown sugar, paprika, black pepper, garlic powder, onion powder, and salt. Mix well.

    Season the Pork

    Sprinkle the rub mixture over the pork belly cubes and toss until evenly coated. Cover and refrigerate for at least 1 hour, preferably overnight.

Cooking

    Preheat the Smoker

    Preheat your smoker to 225°F (107°C). If using applewood chips, soak them in water for 30 minutes before adding to the smoker.

    Smoke the Pork

    Place the seasoned pork belly cubes on the smoker rack. Add the soaked applewood chips to the smoker box. Smoke for 2-3 hours, or until the meat is tender and has a nice bark.

    Glaze with BBQ Sauce

    Remove the smoked pork belly from the smoker. Toss the cubes in BBQ sauce and return them to the smoker for an additional 30 minutes to caramelize the sauce.

    Final Touch

    If desired, drizzle honey over the burnt ends just before serving for added sweetness.

    Remove the burnt ends from the smoker, let them rest for a few minutes, then serve hot with your favorite sides.
