Method

Bourbon Base Preparation

  1. 1

Combine the corn, rye, and malted barley in a large mixing container. Ensure that the grains are well-mixed to create a uniform mash.

  2. 2

Gradually add water to the grain mixture, stirring continuously until a thick slurry is formed.

Fermentation Process

  1. 3

Transfer the mash to a fermentation vessel. Add the yeast to the mixture and stir gently to incorporate.

  2. 4

Cover the fermentation vessel and allow it to ferment at a controlled temperature of around 70°F (21°C) for 3 to 5 days, or until bubbling stops.

Distillation

  1. 5

Once fermentation is complete, transfer the fermented mash to the copper pot still.

  2. 6

Heat the still gradually to separate the alcohol from the mash. Collect the distillate, which is the raw bourbon.

Aging Process

  1. 7

Pour the raw bourbon into the new charred oak barrels. Seal the barrels securely.

  2. 8

Store the barrels in a temperature-controlled warehouse for a minimum of 2 years to allow the bourbon to mature and develop its flavors.
